Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
- Steak and Pork 145° F (rest cooked meat, 3 minutes) |

- Ground Turkey 165° F |

If using antibiotic free chicken, pat dry. Cook until chicken reaches minimum internal temperature, 5-7 minutes per side.

If using salmon, pat dry. Add salmon, skin-side up first, and cook until salmon reaches minimum internal temperature, 4-6 minutes per side.

1 Roast the Potato Rounds
Slice potatoes into 1/4" rounds.
Place potato rounds on prepared baking sheet and toss with 2 tsp. olive oil, 1/4 tsp. salt, and a pinch of pepper. Spread into a single layer and top evenly with cheese.Roast in hot oven until tender, 16-18 minutes.While potatoes roast, continue recipe. -
2 Prepare the Ingredients
Trim woody ends off asparagus.
Mince chives.Pat steaks dry and season both sides with a pinch of salt and pepper. -
3 Cook the Asparagus
Place a large non-stick pan over medium-high heat and add 2 tsp. olive oil.
Add asparagus and garlic salt to hot pan. Stir occasionally until tender, but still crisp, 8-10 minutes.If asparagus are thinner than a pencil, check for doneness sooner.Remove from burner.While asparagus cooks, continue recipe. -
4 Cook the Steaks
Place a medium non-stick pan over medium heat and add 1 tsp. olive oil.
Add steaks to hot pan and cook until steaks reach desired doneness, or 4-6 minutes per side for medium/medium-well.Steak thickness can vary; if you receive a thinner steak, we recommend checking for doneness sooner.Transfer steaks to a plate and rest, 3 minutes.Keep pan over medium heat. -
5 Make Bacon Demi and Finish Dish
Add bacon, vinegar, 2 Tbsp. water, and demi-glace to hot pan. Bring to a simmer.
Once simmering, stir occasionally until thickened slightly, 2-3 minutes.Remove from burner and stir in butter.Plate dish as pictured on front of card, topping steak with bacon demi and garnishing potatoes with chives. Bon appétit!
