1 Microwave Instructions
Remove all produce from any packaging or constraints, then thoroughly rinse and pat dry.
In one section of provided tray, add peppers and 1 tsp. water. Cover tray with a damp paper towel. Microwave covered until peppers are tender, 3-5 minutes.Carefully remove tray from microwave. Add meatballs and enchilada sauce to peppers. Top with cheese.In empty section of tray, combine rice and adobo seasoning. Cover with a damp paper towel. Microwave again covered until meatballs and rice are heated through, 3-4 minutes.Carefully remove from microwave.To serve, top rice with meatballs and garnish with sour cream and tortilla strips. Bon appétit! -
2 Oven Instructions
Turn oven on to 375 degrees. Let preheat, at least 10 minutes. Make sure to use conventional oven setting, not convection. Remove all produce from any packaging or constraints, then thoroughly rinse and pat dry.
In one section of provided tray, add peppers and 1 tsp. water. Place tray on a baking sheet. Bake uncovered in hot oven until peppers are tender, 7-9 minutes.Carefully remove tray from oven. Add meatballs and enchilada sauce to peppers. Top with cheese.In empty section of tray, combine rice and adobo seasoning. Cover tray with foil.Place tray on a baking sheet. Bake again covered in hot oven until meatballs and rice are heated through, 10-12 minutes.Carefully remove tray from oven.To serve, top rice with meatballs and garnish with sour cream and tortilla strips.
