If using chicken breasts, pat dry. Cook in pan until chicken reaches minimum internal temperature, 5-7 minutes per side.

If using pork medallions, pat dry. If you receive a whole pork tenderloin, pat dry and, on a separate cutting board, slice into medallions, 3/4"-thick. Cook in pan until pork reaches minimum internal temperature, 3-5 minutes per side. Rest, 3 minutes. Medallion thickness can vary; if you receive a thinner medallion, we recommend checking for doneness sooner.

If using sirloin steaks, pat dry. Cook in pan until steak reaches desired doneness, or 4-6 minutes per side for medium/medium-well. Rest, 3 minutes. Steak thickness can vary; if you receive a thinner steak, we recommend checking for doneness sooner.

1 Make the Topping
Place cream cheese in a microwave-safe bowl. Cover with a damp paper towel. Microwave covered until softened, 10-15 seconds.
Carefully remove from microwave. Stir in 2/3 the everything bagel blend (reserve remaining for garnish) and half the lemon juice (reserve remaining for dressing) until smooth and combined. -
2 Top the Salmon
Pat salmon dry. Place salmon, skin-side down, on prepared baking sheet.
Top salmon evenly with topping and spread into an even layer. -
3 Roast the Salmon
Roast in hot oven until crust browns slightly and salmon reaches a minimum internal temperature of 145 degrees, 10-15 minutes.
Carefully remove from oven.While salmon roasts, continue recipe. -
4 Finish the Dish
Quarter tomatoes.
Trim cucumber and cut into 1/4" dice.In a mixing bowl, combine cucumbers, tomatoes, ranch seasoning, remaining lemon juice, and a pinch of pepper. Stir to combine. Set aside, 5 minutes.After 5 minutes, add spring mix and dressing and gently toss to combine.Plate dish as pictured on front of card, garnishing salmon with remaining everything bagel blend.
