Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
- Steak and Pork 145° F (rest cooked meat, 3 minutes) |

- Ground Turkey 165° F |

If using antibiotic free chicken, pat dry. Cook until chicken reaches minimum internal temperature, 5-7 minutes per side.

1 Start the Fries
Cut potatoes into 1/4" fries and pat dry.
Place fries on prepared baking sheet and toss with 2 tsp. olive oil and half the seasoned salt (reserve remaining for steaks). Spread into a single layer.Roast in hot oven until lightly browned, 15 minutes.While fries roast, continue recipe. -
2 Prepare the Ingredients
Mince parsley, leaves and stems (reserve a few leaves for garnish). Keep minced parsley and reserved parsley leaves separate.
Stem and mince tarragon.Mince capers.Mince walnuts.Alternatively, add all above ingredients (except reserved parsley leaves) to the bowl of a food processor and pulse until finely chopped.Quarter mushrooms.Pat steaks dry and season all over with remaining seasoned salt. -
3 Add Mushrooms and Finish Fries
After 15 minutes, carefully remove sheet from oven. Push fries to one side. Sheet will be hot! Use a utensil.
Add mushrooms to now-empty side of sheet. Evenly top with 1 tsp. olive oil and season with a pinch of salt and pepper.Roast in hot oven until fries and mushrooms are tender and golden-brown, 10-15 minutes.Carefully remove from oven. Add 1/3 the butter (reserve remaining for sauce) to mushrooms and gently toss until melted and coated. Sheet will be hot! Use a utensil.While fries and mushrooms roast, continue recipe. -
4 Make the Sauce
Place a small non-stick pan over medium-low heat.
Add remaining butter to hot pan. Stir occasionally until butter smells "nutty," turns golden, and brown flecks appear, 2-3 minutes.Add walnuts, capers, minced parsley, and tarragon. Stir occasionally until fragrant, 1-2 minutes.Remove from burner and let cool, 3-4 minutes.While mixture cools, add lemon juice, mustard, and mayonnaise to a mixing bowl and whisk until smooth.After 3-4 minutes, transfer brown butter mixture to bowl and stir to combine. Set aside.Want a super smooth sauce? Transfer mixture to a food processor and pulse until smooth. -
5 Cook Steaks and Finish Dish
Place a medium non-stick pan over medium heat and add 2 tsp. olive oil.
Add steaks to hot pan and cook until steaks reach desired doneness, or 4-6 minutes per side for medium/medium-well.Steak thickness can vary; if you receive a thinner steak, we recommend checking for doneness sooner.Remove from burner. Transfer steaks to a plate and rest, at least 3 minutes.Plate dish as pictured on front of card, serving sauce on the side for steak and fries. Garnish dish with reserved parsley leaves. Bon appétit!
