Cooking Guidelines

To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

  • Steak and Pork 145° F (rest cooked meat, 3 minutes) |

    Halve potatoes and cut into ½" thick slices Mince parsley Stem and ½" slice season filet with pinch s+p

    Roast Potatoes

    Prepped BS Potatoes, parsley, ½ tsp salt, pinch pepper 425 oven 15 minutes, flip

    Cook filet

    med NS pan, med-high heat, 2 tsp oil 3-4 minutes per side, remove to BS with potatoes Roast 6-8 minutes until temp and potatoes are tender and browned

    Cook veg

    small pan, medium-high heat, 2 tsp oil pearl onions and cook until browned, 3-4 minutes add peas and pinch s+p

    Make sauce

    Same pan as filet, 1 tsp oil, med-high heat add shiitake, cook until tender and lightly browned add red wine, cook until slightly reduced,1-2 minutes add demi, bring to boil, remove from heat swirl in butter
