    prep

    combine chipotle mayo with pickle relish mix tempura batter with ⅓ c cold water cut tilapia into 2 pieces per fillet down the center so you have 2 square pieces

    cut and cook potatoes

    cut potatoes into 12 ½ inch wedges toss with 2 t olive oil and old bay seasoning place on prepared tray and roast in oven at 450 for 12-16 minutes, flipping ½ way through

    cooking the fish

    in a large nonstick heat canola oil over medium heat dredge fish in tempura batter and place into pan and allow to fry undisturbed for about 5 minutes flip and allow to continue to cook until golden brown, another 5-7 minutes remove from pan, season with ¼ t salt
