Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

Prepare Ingredients and Start Vegetables
Turn oven on to 425 degrees. Let preheat, at least 10 minutes. Thoroughly rinse any fresh produce and pat dry.
Mince chives.Place garlic and 1 tsp. olive oil on a piece of foil and form a foil pouch around garlic.Add mashed potatoes to provided tray and vigorously stir to combine (no need to drain).Bake potatoes and garlic (placing garlic directly on oven rack, opening-side up) in hot oven until garlic is softened, 12-15 minutes.While potatoes and garlic bake, continue recipe. -
Add the Steaks and Peas
Pat steaks dry and season both sides with pot roast seasoning and a pinch of salt.
Place a medium non-stick pan over medium-high heat and add 1 tsp. olive oil. Add steaks to hot pan and sear undisturbed until browned, 2-3 minutes per side.Remove from burner.After 12-15 minutes, carefully remove tray and garlic from oven. Add sour cream, half the chives (reserve remaining for garlic-chive butter), and a pinch of salt and pepper to potatoes. Stir vigorously to combine and push to one corner of tray. Tray will be hot! Use a utensil.Add peas, half the butter (reserve remaining for garlic-chive butter), mushroom seasoning, and a pinch of salt to tray and stir to combine. Push pea mixture to corner next to potatoes.Transfer steaks to now-empty side of tray. -
Bake Meal and Make Garlic-Chive Butter
Bake uncovered in hot oven until steaks reach a minimum internal temperature of 145 degrees, 8-10 minutes.
Steak thickness can vary; if you receive a thinner steak, we recommend checking for doneness sooner.While meal bakes, transfer roasted garlic to a mixing bowl and mash until a smooth paste forms. Add remaining butter, remaining chives, and a pinch of pepper to garlic paste. Stir to combine. Set aside.Carefully remove tray from oven. Rest, 3 minutes.To serve, top steak with garlic-chive butter. Bon appétit!
