Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
- Steak and Pork 145° F (rest cooked meat, 3 minutes) |

If using diced chicken breasts, pat dry. Bake uncovered in hot oven until chicken reaches minimum internal temperature, 20-25 minutes.

If using diced chicken thighs, pat dry. Bake uncovered in hot oven until chicken reaches minimum internal temperature, 28-30 minutes. Don't worry about trimming. Excess fat will render while cooking and add flavor.

1 Start the Peppers
Turn oven on to 400 degrees. Let preheat, at least 10 minutes. Thoroughly rinse any fresh produce and pat dry.
In provided tray, combine peppers, 1 tsp. olive oil, and a pinch of pepper.Bake uncovered in hot oven, 10 minutes. -
2 Add the Orzo and Shrimp
Carefully remove tray from oven.
Drain shrimp thoroughly and pat dry.Add orzo, mirepoix base, half the cheese (reserve remaining for garnish), and dressing to tray with peppers. Stir to combine and spread into an even layer.Top with shrimp in an even layer and season with chimichurri seasoning. Drizzle with 1 tsp. olive oil. -
3 Bake the Meal
Bake uncovered in hot oven until shrimp reach a minimum internal temperature of 145 degrees, 20-25 minutes.
Carefully remove tray from oven. Add half the tzatziki (reserve remaining for garnish) and stir to combine. Tray will be hot! Use a utensil.To serve, garnish with remaining cheese, remaining tzatziki, and crispy onions. Bon appétit!
