A note about serious food allergies

Basic is bad nowadays (or was ten years ago… what is nowadays anyway?) but these ground beef tacos are basic in the best way. Ground beef, corn, and tomatoes are topped by a scrumptious ranch slaw and some pickled jalapeños. Basic is good; we don't care what Gen Z says. (Who?)

Cooking Guidelines

To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

  • Steak and Pork 145° F (rest cooked meat, 3 minutes) |
  • Seafood 145° F |
  • Chicken 165° F |
  • Ground Beef 160° F |
  • Ground Turkey 165° F |
  • Ground Pork 160° F

Customize It Instructions

  • If using Impossible burger, follow same instructions as beef in Step 1, breaking into smaller pieces and cooking until heated through, 5-7 minutes.

  • If using ground chicken, follow same instructions as beef in Step 1, breaking up chicken until no pink remains and chicken reaches minimum internal temperature, 7-9 minutes.

  • If using steak strips, separate into a single layer and pat dry. Follow same instructions as beef in Step 1, stirring occasionally until no pink remains and steak reaches minimum internal temperature, 4-6 minutes.

    Cook the Beef

    Place a large non-stick pan over medium-high heat.

    Add 2 tsp. olive oil, ground beef, taco seasoning, and a pinch of salt to hot pan. Break up meat until no pink remains and beef reaches a minimum internal temperature of 160 degrees, 4-6 minutes.

    Drain fat from pan, if desired. Keep pan over medium-high heat.

    While ground beef cooks, prepare ingredients.

    Prepare the Ingredients

    Core tomato and cut into 1/2" dice.

    Combine slaw mix and dressing in a mixing bowl. Set aside.

    Combine diced jalapeños and rice vinegar in a microwave-safe bowl. Microwave on high, 30 seconds. Set aside.

    Cook the Vegetables

    Add corn, tomatoes, 1/4 tsp. salt, and a pinch of pepper to hot pan. Stir occasionally until warmed through, 1-2 minutes.

    Remove from burner.

    Warm Tortillas and Finish Dish

    Wrap tortillas in a damp paper towel and microwave until warm, 30-60 seconds.

    Plate dish as pictured on front of card, filling tortillas with ground beef, ranch slaw, queso fresco, and pickled jalapeños (to taste). Bon appétit!
