Before You Cook
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

Trim cucumber, halve lengthwise, then cut into ½” half-moons

Make pickled veg mango slaw
Combine slaw mix, cucumber, and mango with rice wine vinegar and ¼ tsp salt and pinch of pepper.
Toss to combine. Add 2 tsp olive oil and stir to coat well. Set aside.
Finish and plate
In a medium non stick pan, heat 1 tsp. oil. add green onion tops and saute till wilted, 1 min. Add rice all at once and saute till lightly crisped up. Season with salt and pepper. Build out rice bowl following the photo, topping with slaw, and sprinkle with cilantro
