If using antibiotic free chicken breasts, follow same instructions.

1 Start the Butternut Squash
In a microwave-safe bowl, combine 1 tsp. olive oil and butternut squash. Microwave uncovered until tender, 4-6 minutes.
Carefully remove bowl from microwave.While squash cooks, stem thyme.Spray provided tray with cooking spray.Place microwaved squash, 1 tsp. olive oil, thyme, 1/4 tsp. salt and a pinch of pepper in provided tray. Squash will be hot! Use caution. Stir to combine and push to one side. Wipe bowl clean and reserve. -
2 Prepare the Chicken
Pat chicken dry. On a cutting board, carefully cut 4-5 slits across top of chicken, making sure not to cut all the way through. Season chicken with lemon herb seasoning and a pinch of salt and pepper
In reserved bowl, combine garlic cheese spread and softened cream cheese. Evenly fill chicken slits with cheese mixture. Add chicken to empty side of tray. -
3 Bake the Meal
Bake uncovered in hot oven until chicken reaches a minimum internal temperature of 165 degrees, 25-28 minutes.
Carefully remove from oven. Stir butter and almonds into butternut squash. Rest, 3 minutes.While chicken rests, in a mixing bowl, combine spinach, dried cranberries, vinaigrette (to taste), and half the crispy onions (reserve remaining for garnish).To serve, garnish salad with remaining crispy onions. Bon appétit!
