Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

If using ground turkey, break up until turkey reaches minimum internal temperature, 6-8 minutes.

1 Prepare the Ingredients
Trim zucchini ends and cut into large chunks.
Trim and thinly slice green onions. -
2 Blend the Vegetables
Alternatively, skip processing and mince vegetables.
Add mushrooms and zucchini to a food processor. Pulse until vegetables are finely chopped. -
3 Cook the Filling
Place a large non-stick pan over medium-high heat. Add ground beef, vegetables, and 1/4 tsp. salt to hot pan. Break up meat until vegetables are tender and beef reaches a minimum internal temperature of 160 degrees, 4-6 minutes.
Drain any excess liquid from pan. Pan will be hot! Use caution. Stir in fiesta seasoning and a pinch of salt and pepper until combined, 30-60 seconds.Remove from burner. -
4 Assemble the Quesadillas
Place tortillas on a clean, flat work surface.
Evenly divide cheese between tortillas, placing on one half. Top cheese with filling. Fold tortillas over filling, pressing gently to adhere. -
5 Toast Quesadillas and Finish Dish
Place another large non-stick pan over medium heat and add 1 tsp. olive oil.
Working in batches if needed, place quesadillas in hot pan and cook until golden-brown, 2-4 minutes per side.Replenish oil, if necessary.Remove from burner.Plate dish as pictured on front of card, topping quesadilla with sour cream, salsa (to taste), and green onions. Cut quesadilla into triangles, if desired. Bon appétit!
