Assemble The Dish
Place sweet potatoes, red onion, 1/4 tsp of salt and a pinch of pepper in the pan. Top with jack cheese.
Place salmon on top and season with 1/4 tsp salt, pinch of pepper, and chipotle seasoning.Add 1 tsp olive oil evenly on salmon and top with pecans.Roast in a hot oven until sweet potatoes are tender and salmon reaches an internal temperature of 145 degrees, 20 minutes.Drizzle honey on salmon.
