Slice onions thin
Combine honey, franks, and pepper flakes (to taste).
In a 400 degree oven, toast flatbread until lightly browned and slightly crisp, 6-7 minutes.
In a medium non stick pan over medium high heat, add 1 tsp olive oil. Add onions and cook until softened, 4-5 minutes. Add chicken and cook through. Remove from heat and toss with half the honey mixture.
Add half the cheese on the flatbread. Add chicken mixture and remaining cheese. Bake in a 400 degree oven for 2-3 minutes or until cheese is melted.
