Known as the “caviar of the South,” pimiento cheese spread is the stuff of many party appetizers. We've all been there, slathering that cheesy good stuff on a cracker you hope doesn't break and cover you with unattractive crumbs. That cheesy good stuff is perfect on a burger, with some peppery arugula to add some extra crunch. “Caviar” on your burger? Yes, please.

Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

1 Roast the Fries
Cut potatoes into 1/2"-thick fries. Pat dry.
Place fries on prepared baking sheet and toss with 2 tsp. olive oil and a pinch of salt.Spread into a single layer. Roast in hot oven until lightly browned and tender, 25-30 minutes, flipping once halfway through.Carefully remove from oven and toss or gently combine with buttermilk-dill seasoning.While fries roast, continue recipe. -
2 Make the Pimiento Cheese
Combine pesto, cream cheese, hot sauce (to taste), half the mayonnaise (reserve remaining for buns), and shredded cheese in a mixing bowl. Set aside.

3 Form the Patties
Form Impossible burger into two evenly-sized patties, about 5" in diameter. Season with a pinch of pepper.

4 Cook the Patties
Place a large non-stick pan over medium-high heat. Add patties to hot, dry pan. Cook until browned on one side, 3-4 minutes.
Flip patties. Evenly spread pimiento cheese on patties. Cover with lid. Cook until cheese has melted and patties are heated through, 3-4 minutes.Remove from burner. Transfer patties to a plate. Wipe pan clean and reserve. -
5 Toast Buns and Finish Dish
Return pan used to cook burgers to medium heat. Add buns to hot, dry pan and toast until browned, 1-3 minutes.
Remove from burner.Plate dish as pictured on front of card, topping bottom bun with remaining mayonnaise, patty, arugula, and top bun. Bon appétit!
