Cooking Guidelines

To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

  • Steak and Pork 145° F (rest cooked meat, 3 minutes) |
  • Seafood 145° F |
  • Chicken 165° F |
  • Ground Beef 160° F |
  • Ground Turkey 165° F |
  • Ground Pork 160° F

    Prepare the Ingredients

    Break noodles into bite-sized pieces.

    Halve and peel onion. Cut halves into 1/4" dice.

    Remove Italian sausage from casing, if necessary.

    Cook the Sausage

    Line a plate with a paper towel.

    Place a large pot over medium-high heat and add 1 tsp. olive oil. Add Italian sausage to hot pot and break up into smaller pieces. Stir occasionally until golden and sausage reaches a minimum internal temperature of 160 degrees, 4-6 minutes.

    Remove from burner. Transfer sausage to towel-lined plate. Reserve pot; no need to wipe clean.

    Start the Soup

    Return pot used to cook sausage to medium-high heat and add 1 tsp. olive oil. Add onions, 1/4 tsp. salt, and a pinch of pepper to hot pot. Stir occasionally until tender and browned, 3-5 minutes.

    Add tomato sauce, Italian seasoning, chicken base, cream cheese, Italian sausage, and 3 cups water. Stir until combined. Bring to a simmer.

    Add the Noodles

    Once simmering, add noodle pieces to hot pot and cook until al dente and soup has slightly thickened, 10-15 minutes.

    Remove from burner.

    While soup simmers, continue recipe.

    Make Ricotta Topping and Finish Dish

    In a mixing bowl, combine ricotta, pesto, and half the Parmesan (reserve remaining for garnish).
