Cut potatoes into ½" sticks.
Place potatoes on prepared baking sheet and toss with 1 Tbsp. olive oil, seasoning blend, and ¼ tsp. salt. Massage oil into potatoes.
Spread into a single layer and bake until tender and browned, 20 minutes.
While fries bake, prepare ingredients.
Prepare the Ingredients
Stem jalapeño, halve, and mince. Remove seeds and ribs for less spice. Wash hands and cutting board after working with jalapeño.
Mince cilantro (no need to stem).
Make the Burger
In a mixing bowl., combine jalapeño (to taste), ground beef, half the cheese (reserve remaining for topping burgers), ¼ tsp. salt, and a pinch of pepper.
Form beef mixture into two patties, ½"-thick.
Cook Burgers and Toast Buns
Place a medium non-stick pan over medium heat and add 1 tsp. olive oil. Add buns to hot pan, cut side down, 1-2 minutes.
Remove buns from pan and keep pan over medium heat.
Add burgers to hot pan and cook until burgers are browned, 3-4 minutes.
Flip, cover, and cook until burgers reach a minimum internal temperature of 160 degrees, 4-5 minutes.
Top with remaining cheese and cover until cheese is melted, 1-2 minutes.
Finish the Dish
Plate dish as pictured on front of card, smearing chipotle mayonnaise on bottom bun and topping with burger, crispy jalapeño pieces (to taste), and cilantro. Top with top bun. Bon appétit!
