Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

1 Press Tofu and Start Soup
Line a plate with a paper towel. Cut tofu into 1" dice and place on towel-lined plate. Top with paper towels, then press gently but firmly to remove excess moisture. Set aside, at least 5 minutes.
Place a medium pot over medium-high heat and add 2 tsp. olive oil.Add mirepoix blend and seasoning blend to hot pot. Stir occasionally until softened, 5-6 minutes.Stir in noodles, chicken broth concentrate and 3 cups water. Bring to a boil. -
2 Finish the Soup
Once boiling, cook until noodles are tender, 8-10 minutes.
Add tofu and stir occasionally until heated through, 2-3 minutes.Tear spinach into small pieces and add to pot. Cook until wilted, 1-2 minutes.Remove from burner.Plate soup as pictured on front of card. Bon appétit!
