1 Prep
Cut broccoli into bite size pieces
Large dice potatoesslice mushrooms 1/4 inch thick -
2 Roast Vegetables
In a bowl, combine potatoes with 1 tsp olive oil and seasoning blend. Transfer to prepared baking dish.
In another bowl, combine broccoli, pearl onions, 2 tsp olive oil, .25 tsp salt and a pinch of pepper. Toss to coat. transfer to same prepared baking sheet as potatoes.Roast both in 400 degree oven until tender, 15-20 minutes -
3 Cook Lamb
In a large nonstick pan over medium high heat, add 1 tsp olive oil. Sprinkle chops with .25 tsp salt and a pinch of pepper. Sear chops on both sides, 3-4 minutes on each side. Transfer to the baking sheet to finish in the oven with the vegetables.
Do not wipe pan out -
4 Make Sauce
In the same pan over medium high heat, add 1 tsp olive oil. Add mushrooms and cook until tender, 3-4 minutes. Add red wine and demi, bring to a simmer. Add butter and simmer mixture for 3-4 minutes.
