Cut potatoes into rings
In a medium pot over medium high heat, add 1 tsp olive oil. Add poblanos and onions and cook for 3-4 minutes. Add ½ tsp salt, pinch of pepper, and potatoes. Cook for 2 minutes. Add 1½ cups water. Bring to a simmer. Cover and cook until potatoes are tender, 10-12 minutes.

Remove lid and add corn, seasoning, ¼ tsp salt, cilantro and cream. Bring to a simmer.
