Let's not limit the delicious flavors of Mexican food to something wrapped in a tortilla. (Even that is an insulting level of reduction of an amazing cuisine, but nevermind that…) Bring the cheesy, fiery, tomato-y goodness to a loaf o' meat, and be floored by all you taste there. Mexican meatloaf is there to stay.

Form pork mixture into two evenly-sized oval-shaped loaves.

  2. 2

    Bake the Potatoes and Meatloaves

Place potatoes on one half of prepared baking sheet and toss with 1 tsp. olive oil, 1/4 tsp. salt, and chile and cumin rub. Spread into a single layer on their side. Place meatloaves on empty half of baking sheet.

Bake in hot oven until potatoes are tender and meatloaves reach a minimum internal temperature of 160 degrees, 20-25 minutes.

While potatoes and meatloaves bake, continue recipe
