Meatlovers! If using protein, cook in a medium non-stick pan over medium heat with 1 tsp. olive oil. If using diced chicken breasts, pat dry and stir occasionally until chicken reaches minimum internal temperature, 5-7 minutes. If using Impossible burger, break up until burger reaches a minimum internal temperature of 160 degrees, 4-6 minutes. If using shrimp, pat dry and cook until shrimp reach minimum internal temperature, 2-3 minutes per side. If using steak strips, pat dry, coarsely chop, then separate pieces. Stir occasionally until no pink remains and steak reaches minimum internal temperature, 4-6 minutes. Rest, 3 minutes. Add to rice bowl as desired.

1 Prepare the Ingredients
Drain and rinse chickpeas.
Stem cilantro and reserve whole leaves. -
2 Cook the Vegetables and Chickpeas
Place a medium non-stick pan over medium heat and add 2 tsp. olive oil. Add diced peppers to hot pan and stir occasionally until slightly softened, 5-7 minutes.
Add minced garlic and parsley (reserve 1/2 tsp. for crema) and stir occasionally until lightly browned, 30-60 seconds.Add chickpeas, tomatoes, harissa (to taste), and a pinch of salt. Stir often until heated through and slightly reduced, 2-3 minutes.Remove from burner.While vegetables and chickpeas cook, continue recipe. -
3 Heat the Rice
In a large microwave-safe bowl, combine rice, 11/4 cups water, mirepoix base, adobo seasoning, and a pinch of salt.
Microwave uncovered, 4 minutes.Carefully remove rice from microwave and stir. Microwave again uncovered, 2 minutes.Carefully remove from microwave. Rest, 3 minutes.While rice rests, continue recipe. -
4 Make Crema and Finish Dish
In a mixing bowl, combine crème fraîche, a pinch of salt, 1 tsp. olive oil, remaining minced garlic and parsley, and 1 Tbsp. water.
If too thick, add additional water, 1 tsp. at a time, until desired consistency is reached.Plate dish as pictured on front of card, topping rice with crema and garnishing with cilantro. Bon appétit!
