You Will Need

  • Salt
  • Pepper
  • Cooking Spray
  • 1 Baking Sheet
  • 1 Medium Non-Stick Pan
  • 1 Large Non-Stick Pan
  • 1 Mixing Bowl

Before You Cook

    Prepare the Ingredients

    Mince garlic. Cut cauliflower florets into large bite-sized pieces. Pat chicken breasts dry, and season with a pinch of salt and pepper. In a mixing bowl, toss seasoned chicken with breadcrumbs.

    Cook the Chicken

    Place a medium non-stick pan over medium-high heat and add 2 tsp. olive oil. Add chicken to hot pan. Cook undisturbed until browned, 2-3 minutes per side. Transfer chicken to prepared baking sheet. Roast in hot oven until chicken reaches a minimum internal temperature of 165 degrees, 10-12 minutes. Carefully, top chicken with mozzarella. Roast again until cheese is melted, 3-4 minutes. While chicken roasts, start cauliflower.

    Start the Cauliflower

    Place a large non-stick pan over medium-high heat and add 1 Tbsp. olive oil. Add cauliflower to hot pan and stir occasionally until browned, 3-5 minutes. Add garlic and cook until aromatic, 30-60 seconds.

    Finish the Vegetables

    Add wine, ¼ tsp. salt, and a pinch of pepper to pan. Reduce heat to medium. Cover, and cook until cauliflower is tender, 3-6 minutes. Add peas and cook until warmed, 1-2 minutes.
