    Roast The Potatoes

    Halve potatoes lengthwise. Toss fingerling potatoes with 2 tsp. olive oil, ¼ tsp salt, and a pinch of pepper on prepared baking sheet. Spread into a single layer and roast until golden brown and fork-tender, 18-20 minutes. Remove from oven and top with Parmesan. While potatoes roast, prepare the ingredients

    Prepare The Ingredients

    Peel and halve shallot. Slice thinly. Cut mushrooms into ¼" slices. Stem, seed, remove ribs, and cut red bell pepper into ½" strips.

    Cook The Filling

    In a large non-stick pan over medium heat, add 2 tsp olive oil, mushrooms, and peppers. Cook, stirring occasionally, until slightly tender, 3-5 minutes. Add shalliot and mushroom seasoning and cook 2 minutes. Stir in marinara and bring to a simmer.

    Toast The Buns and Finish The Sandwiches

    Place buns cut side up on baking sheet with potatoes and bake until lightly toasted, 2-3 minutes. Remove buns from oven and add vegetable mixture evenly on top. Top with cheese and banana peppers. Return to baking sheet and continue to bake until cheese is melted, 2-3 minutes.
