Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

1 Bake the Pork and Green Beans
Turn oven on to 425 degrees. Let preheat, at least 10 minutes. Thoroughly rinse any fresh produce and pat dry.
Pat pork dry, and season all over with 1/4 tsp. salt and a pinch of pepper. If you receive a whole tenderloin, pat dry and slice into medallions, 3/4" thick.Place pork and mushrooms in a single layer in one provided tray and top evenly with 1 tsp. olive oil.In second provided tray, combine green beans, 1 tsp. olive oil, 1/4 tsp. salt, a pinch of pepper, and 2 tsp. water. Cover with foil, crimping sides until sealed.Bake both trays (green beans covered, pork and mushrooms not covered) until pork reaches a minimum internal temperature of 145 degrees, 10-15 minutes.While pork and green beans bake, make sauce. -
2 Make Sauce and Add Mashed Potatoes
In a mixing bowl, combine crème fraîche, mushroom seasoning, a pinch of salt and pepper, and 2 Tbsp. water.
Carefully remove both trays from oven. Remove pork to a plate and tent with foil, leaving mushrooms in tray. Rest pork, 3 minutes.Stir crème fraîche-water mixture into mushrooms.In second tray, push green beans to one side. Add mashed potatoes to now-empty side and stir vigorously. Spread into a single layer on their side and top with cheese. -
3 Finish the Dish
Bake both trays again uncovered in hot oven until sauce is bubbling and mashed potatoes are hot, 5-7 minutes.
Carefully remove both trays from oven. Transfer pork to sauce and flip until coated. Stir potatoes vigorously.To serve, top potatoes with crispy onions. Bon appétit!
