Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
- Steak and Pork 145° F (rest cooked meat, 3 minutes) |

- Chicken 165° F |

- Ground Turkey 165° F |
- Ground Pork 160° F

If using antibiotic free chicken breasts, follow same instructions.

1 Prepare the Ingredients
Trim and quarter yellow squash lengthwise. Cut into 1/4” slices.
Pat chicken dry. Season both sides with half the garlic salt (reserve remaining for gnocchi) and a pinch of salt and pepper. -
2 Cook the Chicken
Place a large oven-safe non-stick pan over medium heat and add 2 tsp. olive oil.
Add chicken to hot pan and cook until browned and chicken reaches a minimum internal temperature of 165 degrees, 5-7 minutes per side.Transfer chicken to a plate and cover with foil. Keep pan over medium heat; no need to wipe clean. -
3 Cook the Gnocchi and Vegetables
Add 1 Tbsp. olive oil and gnocchi to hot pan. Stir occasionally until tender and golden-brown, 5-7 minutes.
Add 1 tsp. olive oil, corn, yellow squash, remaining garlic salt, and a pinch of salt and pepper. Stir occasionally until slightly browned and tender, 4-5 minutes. -
4 Add the Sauce and Chicken
Add cream base, grated cheese, and a pinch of salt and pepper to hot pan. Stir to combine and bring to a simmer.
Once simmering, stir often until sauce is slightly thickened, 1-2 minutes.If too thick, add water, 1 tsp. at a time, until desired consistency is reached.Remove from burner. Top gnocchi and vegetables with chicken.Evenly top chicken with pesto, then shredded cheese. -
5 Broil Chicken and Gnocchi and Finish Dish
Broil chicken and gnocchi under hot broiler until cheese is browned, 3-4 minutes.
Don't text and broil! Keep an eye on oven as cheese may burn easily under broiler.Carefully remove from oven. Pan handle will be hot! Use an oven mitt.Plate dish as pictured on front of card, topping spring mix with vinaigrette (to taste). Bon appétit!
