Meatlovers! If using protein, cook in a medium non-stick pan over medium heat with 1 tsp. olive oil. If using ground beef or Impossible burger, break up until protein reaches a minimum internal temperature of 160 degrees, 4-6 minutes. If using ground turkey, break up until turkey reaches minimum internal temperature, 6-8 minutes. Add protein to meal as desired.

1 Prepare the Green Onions
Trim and thinly slice green onions on an angle, keeping white and green portions separate.

2 Cook the Vegetables
Place a medium pot over medium heat and add 1 Tbsp. olive oil.
Add peppers, corn, white portions of green onions, and taco seasoning to hot pot.Stir occasionally until vegetables are tender, 3-5 minutes. -
3 Add the Flour
Add flour to hot pot and stir until no dry flour remains.
Add 1 1/2 cups water and enchilada sauce. Stir to combine and bring to a simmer. -
4 Add Beans and Finish Dish
Drain and rinse beans.
Once simmering, add beans to hot pot. Stir occasionally until beans are heated through and broth has slightly thickened, 2-3 minutes.Remove from burner.Plate dish as pictured on front of card, topping soup with cheese, sour cream, green portions of green onions, and tortilla strips. Bon appétit!
