Cooking Guidelines

To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

  • Steak and Pork 145° F (rest cooked meat, 3 minutes) |
  • Seafood 145° F |
  • Chicken 165° F |
  • Ground Beef 160° F |
  • Ground Turkey 165° F |
  • Ground Pork 160° F

Customize It Instructions

  • Meatlovers! If using protein, cook in a medium non-stick pan over medium heat with 1 tsp. olive oil. If using ground beef or Impossible burger, break up until protein reaches a minimum internal temperature of 160 degrees, 4-6 minutes. If using ground turkey, break up until turkey reaches minimum internal temperature, 6-8 minutes. Add protein to meal as desired.

    Prepare the Green Onions

    Trim and thinly slice green onions on an angle, keeping white and green portions separate.

    Cook the Vegetables

    Place a medium pot over medium heat and add 1 Tbsp. olive oil.

    Add peppers, corn, white portions of green onions, and taco seasoning to hot pot.

    Stir occasionally until vegetables are tender, 3-5 minutes.

    Add the Flour

    Add flour to hot pot and stir until no dry flour remains.

    Add 1 1/2 cups water and enchilada sauce. Stir to combine and bring to a simmer.

    Add Beans and Finish Dish

    Drain and rinse beans.

    Once simmering, add beans to hot pot. Stir occasionally until beans are heated through and broth has slightly thickened, 2-3 minutes.

    Remove from burner.

    Plate dish as pictured on front of card, topping soup with cheese, sour cream, green portions of green onions, and tortilla strips. Bon appétit!
