To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

If using antibiotic free chicken, follow same instructions.

1 Roast the Corn
Combine 1 Tbsp. salted butter, 3/4 the chili powder (to taste; reserve remaining for garnish), and 1/4 tsp. salt in a microwave-safe bowl. Microwave uncovered until butter is melted, 30-45 seconds.
Carefully remove from microwave. Stir in a pinch of salt until combined.Place corn on a piece of foil and evenly top with melted butter mixture (to taste). Wrap corn tightly in foil.Roast in hot oven until tender, 20-25 minutes.Carefully remove from oven. Foil will be hot! Use a utensil. Let cool, 5 minutes.While corn roasts, continue recipe. -
2 Start the Potatoes
Cut potatoes into 1" pieces.
Place potatoes on prepared baking sheet and toss with 1 Tbsp. olive oil, potato spice seasoning, and a pinch of salt and pepper. Spread into an even layer.Roast in hot oven, 15 minutes.While potatoes roast, continue recipe. -
3 Prepare Ingredients and Make Crema
Cut lime into wedges.
In a mixing bowl, combine creme fraiche, pesto (to taste), and 4 tsp. water. Set aside.Pat chicken dry and season both sides with fiesta seasoning, 1/4 tsp. salt, and a pinch of pepper. -
4 Add Chicken and Finish Potatoes
Summertime, and the grilling is easy! To grill this chicken, heat grill to medium. Follow same instructions, grilling until browned and chicken reaches a minimum internal temperature of 165 degrees, 5-7 minutes per side.
After 15 minutes, carefully remove sheet from oven and push potatoes to one side.Place chicken on empty side of sheet and evenly top with 2 tsp. olive oil.Roast in hot oven until potatoes are tender and chicken reaches a minimum internal temperature of 165 degrees, 15-20 minutes.Carefully remove from oven. -
5 Finish Corn and Finish Dish
After 5 minutes, or once corn is cool enough to handle, carefully open foil to release steam. Foil will be hot! Use a utensil/caution.
Plate dish as pictured on front of card, topping chicken with crema (to taste). Garnish corn with mayonnaise, cheese, and remaining chili powder (to taste). Squeeze lime wedges over to taste. Bon appétit!
