Texture contrasts are the name of the game here; flaky fish, all tender and falling apart on the fork, crusted with a crunchy panko coat that it wears with particular delight. The yummy, cooling cilantro-lime crema on top just adds to the contrast, soft, creamy, and tasty. Flaky, crunchy, cooling… all in the name of contrasts.

Cooking Guidelines

To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

  • Steak and Pork 145° F (rest cooked meat, 3 minutes) |
  • Seafood 145° F |
  • Chicken 165° F |
  • Ground Beef 160° F |
  • Ground Turkey 165° F |
  • Ground Pork 160° F

Customize It Instructions

  • If using pork chops, follow same instructions as tilapia in Steps 1, 2, and 4, cooking until browned and chops reach minimum internal temperature, 5-7 minutes per side. Rest, 3 minutes. Pork thickness can vary; if you receive a thinner chop, we recommend checking for doneness sooner.

  • If using chicken breasts, follow same instructions as tilapia in Steps 1, 2, and 4, cooking until browned and chicken reaches minimum internal temperature, 5-7 minutes per side.

  • If using salmon fillets, pat dry and season flesh side with a pinch of salt and pepper. Follow same instructions as tilapia in Steps 2 and 4, adding topping to flesh side and cooking, panko side down first, until browned and salmon reaches minimum internal temperature, 4-6 minutes per side.

  1. 1

    Prepare the Ingredients

Halve lime. Cut one half into wedges and juice the other half.

Mince cilantro (no need to stem).

Pat tilapia dry, and season both sides with 1/4 tsp. salt and a pinch of pepper.

  2. 2

    Prepare the Tilapia

In a mixing bowl, combine tempura mix and 2 Tbsp. water. Stir until smooth. If too thick, add additional water, 1 tsp. at a time, until desired consistency is reached.

Place panko in even layer on a plate. Carefully spread tempura batter on one side of tilapia. Place tilapia, batter-side down, in panko and gently press to adhere.

Set aside on a plate, panko-side up, and rest, at least 3 minutes.

    While tilapia rests, continue recipe.

  3. 3

    Cook the Green Beans

    Trim ends off green beans.

Place a large non-stick pan over medium-high heat and add 2 tsp. olive oil. Add corn and cook, 30 seconds.

Add green beans and cook, 1 minute.

Add 1/4 cup water, garlic salt, and a pinch of pepper. Cover, and cook until tender, 6-8 minutes.

If green beans need more time, add 2 Tbsp. water, cover, and stir occasionally, 1-3 minutes.

    Remove from burner.

While green beans cook, continue recipe.

  4. 4

    Cook the Tilapia

Line a plate with a paper towel.

Place a medium non-stick pan over medium-high heat and add 2 Tbsp. olive oil.

Working in batches, if necessary, add tilapia, panko side down first, to hot pan and fry until fish is golden-brown and reaches a minimum internal temperature of 145 degrees, 2-4 minutes per side.

Remove from burner. Transfer to towel-lined plate.

  5. 5

    Make Crema and Finish Dish

In another mixing bowl, combine sour cream, cilantro, a pinch of salt, 2 tsp. lime juice, and 2 tsp. water.

Plate dish as pictured on front of card, topping tilapia with crema. Squeeze lime wedges over to taste. Bon appétit!
