If using chicken breasts, pat dry. Cook in a large non-stick pan with 2 tsp. olive oil over medium heat until chicken reaches minimum internal temperature, 5-7 minutes per side.

If using filets mignon, sirloin steak, or NY strip steak, pat dry. Cook in a large non-stick pan with 2 tsp. olive oil over medium-high heat until steak reaches desired doneness, or 4-6 minutes per side for medium/medium-well. Rest, 3 minutes. Steak thickness can vary; if you receive a thinner steak, we recommend checking for doneness sooner.

1 Prepare the Ingredients
Prick potatoes with a fork. Place potatoes in a microwave-safe bowl. Microwave uncovered until soft, 2-3 minutes.
Carefully remove from microwave. Set aside to cool, 5-10 minutes.Once cool enough to handle, cut potatoes into 1/2" rounds.While potatoes cook and cool, break broccoli into bite-sized pieces. -
2 Roast Potatoes and Broccoli
Place potatoes on one half of prepared baking sheet and toss with 1 tsp. olive oil, pesto, and 1/4 tsp. salt. Spread into a single layer on one side.
Add broccoli to empty half of baking sheet and toss with 1 tsp. olive oil, garlic pepper, and 1/4 tsp. salt. Spread into a single layer on other side.Roast vegetables in hot oven until browned and tender, 10-15 minutes. Keep an eye on oven! Potatoes may finish cooking before broccoli. Carefully remove from oven. Add half the lemon juice (reserve remaining for butter) to broccoli.While vegetables cook, continue recipe. -
3 Cook the Salmon
Combine panko and half the cheese (reserve remaining for garnish) on a plate.
Pat salmon dry and season flesh side with 1/4 tsp. salt. Place salmon, flesh-side down, on panko-cheese mixture, pressing gently to adhere to one side.Place a medium non-stick pan over medium heat and add 1 tsp. olive oil. Add salmon, panko-side down first, to hot pan and sear until golden brown and salmon reaches a minimum internal temperature of 145 degrees, 4-6 minutes per side.Remove from burner. -
4 Make Lemon Butter and Finish Dish
In a mixing bowl, combine remaining lemon juice and softened butter.
Plate dish as pictured on front of card, topping salmon with lemon butter and garnishing potatoes with remaining cheese. Bon appétit!
