If using antibiotic free chicken, pat dry. Cook in a medium non-stick pan over medium heat with 1 tsp. olive oil until chicken reaches minimum internal temperature, 5-7 minutes per side.

1 Start the Cauliflower
Break cauliflower into bite-sized pieces using hands.
In provided tray, combine cauliflower, garlic salt, and a pinch of pepper. Massage oil and seasonings into cauliflower. Spread into an even layer.Bake uncovered in hot oven, 10 minutes.While cauliflower bakes, continue recipe. -
2 Add Chicken and Bake Meal
Pat chicken dry. Season both sides with 1/4 tsp. salt, a pinch of pepper, and half the Italian seasoning (remaining is yours to use as you please!).
After 10 minutes, carefully remove tray from oven.Stir in pesto until combined and push cauliflower to one side of tray. Tray will be hot! Use a utensil.Place chicken in now-empty side of tray.Bake uncovered in hot oven until cauliflower is tender and chicken reaches a minimum internal temperature of 165 degrees, 13-18 minutes. Cutlet thickness can vary; if you receive a thinner cutlet, we recommend checking for doneness sooner.While meal bakes, continue recipe. -
3 Heat Sauce and Finish Meal
In a microwave-safe bowl, combine creme fraiche, 1 Tbsp. water, lemon juice, cheese, and a pinch of salt and pepper.
Microwave uncovered until cheese is melted, 30-60 seconds. Carefully remove from microwave and stir to combine.Carefully remove tray from oven.To serve, top chicken with sauce. Garnish cauliflower with crispy bell peppers. Bon appétit!
