Cooking Guidelines

1 Prepare the Ingredients
Cut lime into wedges.
Trim and thinly slice green onions, keeping white and green portions separate. -
2 Cook the Plantains
Cut plantains into 1/2'' dice.
Line a plate with a paper towel.Place a medium non-stick pan over medium heat and add 2 tsp. olive oil.Add plantains to hot pan. Cook until golden-brown, 3-4 minutes.Transfer to towel-lined plate. Wipe pan clean and keep over medium heat. Pan will be hot! Use caution. -
3 Make the Pulled Pork Filling
Drain pulled pork and separate pieces.
Add pork, corn, white portions of green onions, and half the chili powder (to taste; remaining is yours to use as you please!) to hot pan. Stir often, breaking up pork until heated through, 2-3 minutes.Stir in salsa (to taste) until combined, 1-2 minutes.Remove from burner.While pork filling cooks, continue recipe. -
4 Heat Tortillas and Finish Dish
Wrap tortillas in a damp paper towel. If tortillas come folded, keep folded.
Microwave until heated through, 30-60 seconds.Carefully remove from microwave.Plate dish as pictured on front of card, filling tortillas with pork filling, plantains, green portions of green onions, then cheese. Squeeze lime wedges over to taste. Bon appétit!
