If using diced chicken breasts, pat dry. Stir occasionally until chicken reaches minimum internal temperature, 5-7 minutes.

If using sliced beef, pat dry, coarsely chop, then separate pieces. Stir occasionally until beef reaches minimum internal temperature, 4-6 minutes. Rest, 3 minutes.

1 Prepare the Ingredients
Core tomato and cut into 1/4" dice.
Finely chop banana peppers.Pat sliced pork dry. Coarsely chop, then separate pieces. Season all over with half the chimichurri seasoning (reserve remaining for tomato topping) and a pinch of salt. -
2 Cook the Pork
Place a large non-stick pan over medium-high heat and add 2 tsp. olive oil.
Add sliced pork to hot pan. Stir occasionally until browned and pork reaches a minimum internal temperature of 145 degrees, 5-7 minutes.Remove from burner. Rest, 3 minutes.While pork cooks, continue recipe. -
3 Heat the Rice
Carefully massage rice in bag to break up any clumps and remove from packaging.
Place rice in a microwave-safe bowl. Microwave uncovered until heated through, 2-3 minutes.Carefully remove from microwave. Stir in softened butter and 1/4 tsp. salt until combined. Rest, 2 minutes.Fluff rice with a fork.While rice microwaves, continue recipe. -
4 Make Tomato Topping and Finish Dish
In a mixing bowl, combine tomatoes, banana peppers (to taste), 1 tsp. olive oil, and remaining chimichurri seasoning. Set aside.
Coarsely crush pita chips.Plate dish as pictured on front of card, topping rice with pork. Garnish with tomato topping (to taste), cheese, pita chips, and tzatziki. Bon appétit!
