To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

Large dice potatoes
Slice mushrooms ¼ inch
Toss potatoes with 1 tsp olive oil and the seasoning. In a large nonstick pan over medium high heat, cook potatoes until browned all over, 4-5 minutes. Transfer to prepared baking sheet and roast for 15 minutes or until tender.
Form burgers with ¼ tsp salt and a pinch of pepper. In the same pan, spray with pan spray. Cook burgers until done. Transfer to plate. Do not wipe pan.
In the same pan, add mushrooms and cook until softened. Add demi and hot sauce, bring to a simmer. Remove from heat and stir in sour cream. If mixture is too thick, add a couple tablespoons of water to make it saucier.
