    Prepare The Ingredients

    Cut mushrooms into ¼" slices. Cut puff pastry in half. Score one side of each piece. Refrigerate until ready to use.

    Pat chicken breasts dry, and season both sides with poultry seasoning and a pinch of salt and pepper. " Place a large non-stick pan over medium-high heat.     Cook The Filling

    In the same pan over medium high heat, add 2 tsp olive oil. Add mushrooms, mirepoix blend, and garlic salt to hot pan and stir occasionally until browned, 3-4 minutes. Add peas, ¼ tsp salt and a pinch of pepper and cook 1 minute. Add cream cheese and ¼ cup water and bring to a simmer. Cook until slightly thickened, 2-3 minutes.

    Bake The Casserole

    Transfer mixture to prepared casserole dish. Top with cheese. Bake in a hot oven until pastry is puffed and browned, 7-8 minutes.
