1 Prepare The Ingredients
Cut mushrooms into 1/4" slices.
Cut puff pastry in half. Score one side of each piece. Refrigerate until ready to use. -
2 Cook The Chicken
Pat chicken breasts dry, and season both sides with poultry seasoning and a pinch of salt and pepper.

3 Cook The Filling
In the same pan over medium high heat, add 2 tsp olive oil. Add mushrooms, mirepoix blend, and garlic salt to hot pan and stir occasionally until browned, 3-4 minutes. Add peas, 1/4 tsp salt and a pinch of pepper and cook 1 minute.
Add cream cheese and 1/4 cup water and bring to a simmer. Cook until slightly thickened, 2-3 minutes. -
4 Bake The Casserole
Transfer mixture to prepared casserole dish. Top with cheese. Bake in a hot oven until pastry is puffed and browned, 7-8 minutes.
