Prepare The Ingredients
Cut mushrooms into ¼" slices.
Cut puff pastry in half. Score one side of each piece. Refrigerate until ready to use.
Cook The Chicken
Pat chicken breasts dry, and season both sides with poultry seasoning and a pinch of salt and pepper.

While chicken cooks, prepare the filling.
Cook The Filling
In the same pan over medium high heat, add 2 tsp olive oil. Add mushrooms, mirepoix blend, and garlic salt to hot pan and stir occasionally until browned, 3-4 minutes. Add peas, ¼ tsp salt and a pinch of pepper and cook 1 minute.
Add cream cheese and ¼ cup water and bring to a simmer. Cook until slightly thickened, 2-3 minutes.
Bake The Casserole
Transfer mixture to prepared casserole dish. Top with cheese. Bake in a hot oven until pastry is puffed and browned, 7-8 minutes.
