Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
- Steak and Pork 145° F (rest cooked meat, 3 minutes) |

If using antibiotic free chicken, pat dry. Cook until chicken reaches minimum internal temperature, 5-7 minutes per side.

If using salmon, pat dry. Add salmon, skin-side up first, and cook until salmon reaches minimum internal temperature, 4-6 minutes per side.

1 Roast the Sweet Potato Frites
Peel sweet potatoes, if desired. Cut into 1/4"-thick wedge-shaped frites.
Place frites on prepared baking sheet and toss with 2 tsp. olive oil and potato spice seasoning. Spread into an even layer.Roast in hot oven, 15 minutes.Carefully remove from oven. Flip frites and evenly top with cheese. Sheet and frites will be hot! Use a utensil/caution.Roast again in hot oven until browned and tender, 15-20 minutes.Carefully remove from oven.While frites roast, continue recipe. -
2 Prepare the Ingredients
Mince garlic.
Pat steaks dry. Season both sides with half the coarse black pepper (reserve remaining for crema) and 1/4 tsp. salt. -
3 Cook the Steaks
Place a medium non-stick pan over medium heat and add 1 tsp. olive oil.
Add steaks to hot pan. Cook until steaks reach desired doneness, or 4-6 minutes per side for medium/medium-well.Steak thickness can vary; if you receive a thinner steak, we recommend checking for doneness sooner.Remove from burner. Rest, 3 minutes.While steaks cook, continue recipe. -
4 Cook the Spinach
Place a large non-stick pan over medium-high heat and add 2 tsp. olive oil.
Add garlic to hot pan. Stir often until fragrant, 30-60 seconds.Add spinach in batches (don't overflow pan) and a pinch of salt and pepper. Stir occasionally until wilted, 2-3 minutes.Remove from burner.While spinach cooks, continue recipe. -
5 Make Crema and Finish Dish
In a mixing bowl, combine softened butter, softened creme fraiche, mustard (to taste), remaining coarse black pepper, and a pinch of salt.
Plate dish as pictured on front of card, topping steak with crema. Bon appétit!
