Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

1 Cook the Rice
Bring a small pot with rice, 11/4 cups water, and adobo seasoning to a boil.
Once boiling, reduce to a simmer, cover, and cook until rice is tender, 15-18 minutes.Remove from burner and set aside.While rice cooks, continue recipe. -
2 Prepare the Ingredients
Halve lime. Cut one half into wedges and juice the other half.
Mince cilantro (no need to stem).Stem jalapeño, halve, remove seeds and ribs, and mince. Retain seeds for more spice. Wash hands and cutting board after working with jalapeño. -
3 Make the Chimichurri
In a mixing bowl, combine cilantro, jalapeños (to taste), 2 tsp. lime juice, 1 Tbsp. olive oil, and a pinch of salt and pepper. Set aside.

4 Cook the Seitan
Place a large non-stick pan over medium-high heat and add 2 tsp. olive oil. Add seitan to hot pan, breaking up into crumbles. Stir occasionally until lightly browned and seitan reaches a minimum internal temperature of 160 degrees, 3-5 minutes.
Add chile and cumin rub, tomato sauce, and 2 Tbsp. water. Bring to a simmer.Once simmering, stir occasionally until slightly reduced, 1-2 minutes.Remove from burner. -
5 Finish the Dish
Plate dish as pictured on front of card, topping rice with seitan and garnishing with cheese, chimichurri (to taste), and tortilla strips. Squeeze lime wedges over to taste. Bon appétit!
