If using antibiotic free chicken, pat dry. Add chicken to a medium non-stick pan with 2 tsp. olive oil over medium heat. Cook until chicken reaches minimum internal temperature, 5-7 minutes per side.

If using filets mignon or sirloin steaks, pat dry. Add steaks to a medium non-stick pan with 2 tsp. olive oil over medium heat. Cook until steak reaches desired doneness, or 4-6 minutes per side for medium/medium-well. Rest, 3 minutes. Steak thickness can vary; if you receive a thinner steak, we recommend checking for doneness sooner.

If using salmon, pat dry. Add salmon, skin-side up first to a medium non-stick pan with 2 tsp. olive oil over medium heat. Cook until salmon reaches minimum internal temperature, 4-6 minutes per side.

1 Prepare the Ingredients
Peel, trim, and cut carrot lengthwise into 1/4" half-moons. If carrot is larger than 1" in diameter, halve before slicing.
Cut broccoli into bite-sized pieces.In a microwave-safe bowl, combine honey, vinaigrette, mustard (to taste), and a pinch of salt and pepper. Set aside.Pat trout dry. Season flesh side with potato spice seasoning and a pinch of salt. -
2 Start the Vegetables
Place carrots and broccoli on one side of prepared baking sheet. Toss with 2 tsp. olive oil, garlic and parsley seasoning, and 1/4 tsp. salt. Spread into a single layer on their side.
Roast in hot oven, 12 minutes.Carefully remove from oven. -
3 Add Trout and Finish Vegetables
Place trout on empty side of sheet and evenly top with 1 tsp. honey mixture (reserve remaining for butter).
Roast in hot oven until vegetables are tender and trout reaches a minimum internal temperature of 145 degrees, 7-10 minutes.Carefully remove from oven and stir pesto butter into vegetables until combined. Sheet will be hot! Use a utensil.While trout and vegetables roast, continue recipe. -
4 Heat Glaze and Finish Dish
Add plain butter to bowl with remaining honey mixture.
Microwave uncovered until butter is melted, 10-20 seconds.Carefully remove from microwave and stir to combine. Use a new utensil. Do not cross contaminate!To serve, top trout with glaze and garnish with almonds. Bon appétit!
