To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

If using ground beef or ground turkey, roast until meatballs reach minimum internal temperature, 17-20 minutes.

1 Prepare the Ingredients
Trim green beans, if necessary.
Peel, trim, and cut carrot into 1/4" slices on an angle. If carrot is larger than 1" in diameter, halve before slicing.Finely crush crackers.In a mixing bowl, combine crackers, mayonnaise, ground pork, half the buttermilk-dill seasoning (reserve remaining for green beans), and 1/4 tsp. salt. Form meat mixture into 8 equally-sized meatballs. -
2 Assemble the Vegetables and Meatballs
Place green beans on 1/3 of prepared baking sheet. Toss with 1 tsp. olive oil, remaining buttermilk-dill seasoning, and a pinch of salt. Spread into an even layer on their side.
Place carrots in center of baking sheet. Toss with 1 tsp. olive oil, garlic and parsley seasoning, and a pinch of salt. Spread into an even layer in center of sheet.Place leeks next to carrots, in center of sheet. Toss with 1 tsp. olive oil and spread into an even layer next to carrots, leaving space for meatballs.Place meatballs on empty side of sheet. -
3 Roast the Vegetables and Meatballs
Roast in hot oven until vegetables are tender and meatballs reach a minimum internal temperature of 160 degrees, 15-20 minutes.
Carefully remove from oven. -
4 Make Crema and Finish Dish
Transfer leeks to a heat-safe mixing bowl. Leeks will be hot! Use a utensil.
Stir in creme fraiche, mustard, and 2 tsp. water until combined.To serve, top meatballs with crema. Bon appétit!
