To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

If using antibiotic free chicken, pat dry. Cook in a medium non-stick pan with 2 tsp. olive oil over medium heat until chicken reaches minimum internal temperature, 5-7 minutes per side.

If using filets mignon or sirloin steaks, pat dry. Cook in a medium non-stick pan with 2 tsp. olive oil over medium heat until steak reaches desired doneness, or 4-6 minutes per side for medium/medium-well. Rest, 3 minutes. Steak thickness can vary; if you receive a thinner steak, we recommend checking for doneness sooner.

If using salmon, pat dry. Cook, skin-side up first, in a medium non-stick pan with 2 tsp. olive oil over medium heat until salmon reaches minimum internal temperature, 4-6 minutes per side.

1 Start the Vegetables
Halve potatoes lengthwise.
Place potatoes on prepared baking sheet and toss with 2 tsp. olive oil and half the garlic salt (reserve remaining for chicken). Spread into an even layer, cut-side down.Roast in hot oven, 10 minutes.Carefully remove from oven and toss potatoes with cheese. Push to one side of sheet. Sheet and potatoes will be hot! Use a utensil. -
2 Add the Leeks and Chicken
Place leeks next to potatoes and toss with 1 tsp. olive oil. Spread into an even layer.
Pat chicken dry and season both sides with 1 tsp. olive oil, rotisserie chicken seasoning, and remaining garlic salt.Place chicken on empty side of sheet. Sheet will be hot! Use caution. -
3 Finish the Vegetables and Chicken
Roast in hot oven until vegetables are lightly browned and tender and chicken reaches a minimum internal temperature of 165 degrees, 15-20 minutes.
Carefully remove from oven.While vegetables and chicken roast, continue recipe. -
4 Make Creamed Spinach and Finish Dish
Finely chop spinach.
In a microwave-safe bowl, combine spinach, roasted leeks, creme fraiche, a pinch of salt, and 2 tsp. water. Leeks may be hot! Use caution.Microwave uncovered until spinach is wilted, 15-30 seconds.Carefully remove from microwave and stir to combine.To serve, top chicken with creamed spinach and crispy onions. Slice chicken, if desired. Bon appétit!
