Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

1 Start the Potatoes
Quarter potatoes. Cut into 6-8 wedges if larger than a ping-pong ball.
Place potatoes on prepared baking sheet. Top potatoes with potato spice seasoning, a pinch of pepper, and 1 Tbsp. olive oil. Massage oil and seasonings into potatoes. Spread into an even layer.Roast in hot oven, 10 minutes.While potatoes roast, continue recipe. -
2 Make Bacon Topping and Add Chicken
In a mixing bowl, combine brown sugar and bacon. Set aside.
Pat chicken dry and season both sides with a pinch of salt.After 10 minutes, carefully remove baking sheet from oven. Push potatoes to one side of baking sheet. Potatoes will be hot! Use a utensil.Place chicken on now-empty side of baking sheet. Top evenly with BBQ sauce, then bacon topping. -
3 Finish the Potatoes and Chicken
Roast in hot oven until potatoes are golden-brown and tender and chicken reaches a minimum internal temperature of 165 degrees, 15-18 minutes.
Cutlet thickness can vary; if you receive a thinner cutlet, we recommend checking for doneness sooner.Carefully remove from oven.While potatoes and chicken roast, continue recipe. -
4 Prepare Chives and Finish Dish
Mince chives.
To serve, garnish potatoes with cheese, sour cream, and chives. Bon appétit!
