Cooking Guidelines

To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

  • Steak and Pork 145° F (rest cooked meat, 3 minutes) |
  • Seafood 145° F |
  • Chicken 165° F |
  • Ground Beef 160° F |
  • Ground Turkey 165° F |
  • Ground Pork 160° F

Customize It Instructions

  • If using antibiotic free chicken, pat dry. Cook in a medium non-stick pan over medium heat with 1 tsp. olive oil until chicken reaches minimum internal temperature, 5-7 minutes per side.

    Start the Potatoes

    Cut potatoes into 1/2" dice.

    Place potatoes, 1 Tbsp. olive oil, and 1/4 tsp. salt on prepared baking sheet. Massage oil and seasoning into potatoes. Spread into an even layer.

    Roast in hot oven, 15 minutes.

    While potatoes roast, continue recipe.

    Prepare Ingredients and Make Pesto Crema

    Cut cauliflower into 1/2” pieces.

    In a mixing bowl, combine pesto and sour cream. Set aside.

    Combine cheese, panko, and half the Italian seasoning (reserve remaining for cauliflower) on a plate. Spread into an even layer.

    Pat trout dry. Season flesh side with half the black garlic seasoning (reserve remaining for cauliflower) and 1/4 tsp. salt. Evenly top with mayonnaise. Transfer trout, mayonnaise-side down, onto plate with panko mixture, pressing gently to adhere.

    Add the Cauliflower and Trout

    After 15 minutes, carefully remove baking sheet from oven.

    Add 1 tsp. olive oil, cauliflower, 1/4 tsp. salt, remaining Italian seasoning, and remaining black garlic seasoning to potatoes. Stir to combine and push vegetables to one side of sheet. Sheet will be hot! Use a utensil.

    Place trout, skin-side down, on now-empty side of sheet. Spray with cooking spray.

    Finish Vegetables and Trout and Finish Dish

    Roast in hot oven until vegetables are tender and trout reaches a minimum internal temperature of 145 degrees, 7-10 minutes.

    Carefully remove from oven.

    To serve, stir pesto crema into vegetables until combined. Sheet will be hot! Use a utensil. Bon appétit!
