If using antibiotic free chicken, pat dry. Cook in a medium non-stick pan over medium heat with 1 tsp. olive oil until chicken reaches minimum internal temperature, 5-7 minutes per side.

1 Start the Potatoes
Cut potatoes into 1/2" dice.
Place potatoes, 1 Tbsp. olive oil, and 1/4 tsp. salt on prepared baking sheet. Massage oil and seasoning into potatoes. Spread into an even layer.Roast in hot oven, 15 minutes.While potatoes roast, continue recipe. -
2 Prepare Ingredients and Make Pesto Crema
Cut cauliflower into 1/2” pieces.
In a mixing bowl, combine pesto and sour cream. Set aside.Combine cheese, panko, and half the Italian seasoning (reserve remaining for cauliflower) on a plate. Spread into an even layer.Pat trout dry. Season flesh side with half the black garlic seasoning (reserve remaining for cauliflower) and 1/4 tsp. salt. Evenly top with mayonnaise. Transfer trout, mayonnaise-side down, onto plate with panko mixture, pressing gently to adhere. -
3 Add the Cauliflower and Trout
After 15 minutes, carefully remove baking sheet from oven.
Add 1 tsp. olive oil, cauliflower, 1/4 tsp. salt, remaining Italian seasoning, and remaining black garlic seasoning to potatoes. Stir to combine and push vegetables to one side of sheet. Sheet will be hot! Use a utensil.Place trout, skin-side down, on now-empty side of sheet. Spray with cooking spray. -
4 Finish Vegetables and Trout and Finish Dish
Roast in hot oven until vegetables are tender and trout reaches a minimum internal temperature of 145 degrees, 7-10 minutes.
Carefully remove from oven.To serve, stir pesto crema into vegetables until combined. Sheet will be hot! Use a utensil. Bon appétit!
