1 Start the Potatoes
Halve potatoes.
Place potatoes on prepared baking sheet and toss with 4 tsp. olive oil, 1/4 tsp. salt, and a pinch of pepper. Spread into a single layer.Roast in hot oven, 15 minutes.While potatoes roast, continue recipe. -
2 Prepare the Ingredients
Coarsely crush potato sticks.
Trim and thinly slice green onions on an angle, keeping white and green portions separate.In a mixing bowl, combine softened butter, softened cream cheese, mozzarella, and white portions of green onions. Set aside.Pat chicken dry. Season both sides with 1/4 tsp. salt and a pinch of pepper. -
3 Finish the Potatoes and Chicken
After 15 minutes, carefully remove sheet from oven. Flip potatoes and push to one side of sheet. Evenly top with cheddar-jack. Sheet will be hot! Use a utensil.
Place chicken on empty side of sheet. Evenly top with butter-cream cheese mixture, then potato sticks, pressing gently to adhere. Sheet will be hot! Use caution.Roast in hot oven until potatoes are tender, cheese is melted, and chicken reaches a minimum internal temperature of 165 degrees, 13-18 minutes. Cutlet thickness can vary; if you receive a thinner cutlet, we recommend checking for doneness sooner.Carefully remove from oven.While potatoes and chicken roast, continue recipe. -
4 Crisp Bacon and Finish Dish
Line a microwave-safe plate with a paper towel.
Spread bacon evenly on towel-lined plate.Microwave uncovered until crispy, 60-90 seconds, stirring once halfway through.Carefully remove from microwave.To serve, top potatoes with bacon, sour cream, and green portions of green onions. Bon appétit!
