Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:
- Steak and Pork 145° F (rest cooked meat, 3 minutes) |

If using antibiotic free chicken, pat dry. Add chicken to a medium non-stick pan with 2 tsp. olive oil over medium heat. Cook until chicken reaches minimum internal temperature, 5-7 minutes per side.

If using filets mignon or sirloin steaks, pat dry. Add steaks to a medium non-stick pan with 2 tsp. olive oil over medium heat. Cook until steak reaches desired doneness, or 4-6 minutes per side for medium/medium-well. Rest, 3 minutes. Steak thickness can vary; if you receive a thinner steak, we recommend checking for doneness sooner.

If using salmon, pat dry. Add salmon, skin-side up first to a medium non-stick pan with 2 tsp. olive oil over medium heat. Cook until salmon reaches minimum internal temperature, 4-6 minutes per side.

1 Start the Vegetables
Cut potatoes into 1" pieces.
Place potatoes, half the garlic pepper (reserve remaining for trout), 1/4 tsp. salt, and 2 tsp. olive oil on prepared baking sheet. Massage oil and seasonings into potatoes and spread into an even layer.Roast in hot oven, 15 minutes.While potatoes roast, continue recipe. -
2 Prepare the Ingredients
Remove stem, seeds, and ribs, and cut bell pepper into 1/2" dice.
Pat trout dry and season flesh side with remaining garlic pepper. -
3 Add the Trout
After 15 minutes, carefully remove sheet from oven.
Stir bell peppers and a pinch of salt into potatoes. Push vegetables to one side of sheet. Sheet will be hot! Use a utensil.Place trout on now-empty side of sheet. -
4 Finish Trout and Vegetables and Finish Dish
Roast in hot oven until vegetables are tender and trout reaches a minimum internal temperature of 145 degrees, 7-10 minutes.
Carefully remove from oven. Stir softened butter into vegetables until melted and combined.To serve, top trout with softened Sicilian sauce (to taste). Garnish vegetables with cheese. Bon appétit!
