Pat chicken dry and season all over with blackening seasoning. Don't worry about trimming. Excess fat will render while cooking and add flavor.

    Cook the Chicken

Place a medium non-stick pan over medium heat and add 2 tsp. olive oil.

Add chicken to hot pan. Stir occasionally until chicken is slightly browned and reaches a minimum internal temperature of 165 degrees, 5-7 minutes.

    Remove from burner.

    While chicken cooks, continue recipe.

  3. 3

    Prepare the Ingredients

Drain and rinse beans in a colander/strainer.

Core tomato and cut into 1/2" dice.

    Coarsely chop cilantro.

Halve lime. Juice one half; keeping remaining half whole.

  4. 4

    Assemble Salad and Finish Dish

In a mixing bowl, combine spring mix, cabbage, tomatoes, cilantro, beans, half the dressing (to taste; reserve remaining for garnish), a pinch of salt, and 2 tsp. lime juice.
