Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

1 Prepare the Ingredients
Remove any discolored outer leaves from bok choy and trim ends. Cut into 1/4" strips.
Drain tofu in a colander/strainer. Line a plate with paper towels. Cut tofu into 1/2" dice. Place on towel-lined plate. Top with paper towels, then press gently but firmly to remove excess moisture.In a mixing bowl, combine tofu, 1/2 tsp. salt, and cornstarch. Gently toss until coated. -
2 Cook the Fried Rice
Carefully massage rice in bag to break up any clumps and remove from packaging.
Place a medium non-stick pan over medium-high heat and add 2 tsp. olive oil. Add bok choy to hot pan. Stir occasionally until tender, 5-7 minutes.Add 2 tsp. olive oil, carrots, minced garlic and chili pepper (to taste), and cashews. Stir often until garlic is fragrant, 1-2 minutes.Add rice, umami seasoning, and soy sauce. Stir often until combined and rice is heated through, 2-3 minutes.Remove from burner.While fried rice cooks, continue recipe. -
3 Cook the Tofu
Place a large non-stick pan over medium-high heat and add 1 Tbsp. olive oil.
Add tofu to hot pan. Stir occasionally until golden-brown, 6-8 minutes.Don't rush cooking the tofu; it will need the complete cooking time for the correct crispness.Remove from burner.While tofu cooks, continue recipe. -
4 Heat Sauce and Finish Dish
In a microwave-safe bowl, combine BBQ sauce (to taste) and sweet chili sauce.
Microwave uncovered until heated through, 30-60 seconds.Carefully remove from microwave and stir to combine.Plate dish as pictured on front of card, topping tofu with sauce (to taste). Garnish with sesame seeds. Bon appétit!
