If using filets mignon or NY strip steak, pat dry. Cook in a large non-stick pan with 2 tsp. olive oil over medium-high heat until steak reaches desired doneness, or 4-6 minutes per side for medium/medium-well. Rest, 3 minutes. Steak thickness can vary; if you receive a thinner steak, we recommend checking for doneness sooner.

1 Start the Potatoes
Cut potatoes into 1/2" wedges. Place potatoes on prepared baking sheet and toss with 2 tsp. olive oil, 1/4 tsp. salt, and a pinch of pepper. Spread into an even layer and sprinkle with Parmesan.
Roast in hot oven, 12 minutes.While potatoes roast, continue recipe. -
2 Prepare Mushrooms and Make Black Garlic Butter
Stem mushrooms.
In a mixing bowl, combine mushrooms, 2 tsp. olive oil, 1/4 tsp. salt, and a pinch of pepper.In another mixing bowl, combine half the softened butter (reserve remaining for filling) and half the black garlic seasoning (remaining is yours to use as you please!).Pat steaks dry and season both sides with 1/4 tsp. salt and a pinch of pepper. -
3 Make Filling and Assemble Mushrooms
Combine blue cheese (to taste), remaining softened butter, and half the panko (reserve remaining for topping) in another mixing bowl. Mash until combined.
Divide filling evenly among mushrooms, pressing gently to adhere. Top with remaining panko. -
4 Roast the Mushrooms and Potatoes
After 12 minutes, carefully remove potatoes from oven. Flip potatoes and push to one side of baking sheet. Sheet will be hot! Use a utensil.
Add mushrooms, filling-side up, to now-empty side of baking sheet.Roast in hot oven until topping is golden-brown and vegetables are tender, 12-15 minutes.While vegetables roast, continue recipe. -
5 Cook Steaks and Finish Dish
Place a large non-stick pan over medium-high heat and add 2 tsp. olive oil. Add steaks to hot pan and cook until steaks reach desired doneness, or 4-6 minutes per side for medium/medium-well.
