Our parents and grandparents had their veggie foods either boiled beyond any texture or flavor, or canned into oblivion. We're all very lucky to live in the 21st century, where vegetables taste delicious and amazing. Like here, with umami mushrooms, tart pesto with cream cheese, and fresh arugula on top. And some smoky Gouda as well? Modernity is amazing.
