If using antibiotic free chicken, pat dry. Cook in a medium non-stick pan with 2 tsp. olive oil over medium heat until chicken reaches minimum internal temperature, 5-7 minutes per side.

If using filets mignon, pat dry. Cook in a medium non-stick pan with 2 tsp. olive oil over medium heat until steak reaches desired doneness, or 4-6 minutes per side for medium/medium-well. Rest, 3 minutes. Steak thickness can vary; if you receive a thinner steak, we recommend checking for doneness sooner.

If using salmon, pat dry. Cook in a medium non-stick pan with 2 tsp. olive oil over medium heat until salmon reaches minimum internal temperature, 4-6 minutes per side.

1 Start Pork and Prepare Spinach
Pat pork medallions dry and season all over with poultry seasoning and 1/4 tsp. salt.
Place pork medallions in provided tray and evenly top with 1 tsp. olive oil.Bake uncovered in hot oven, 10 minutes.Pork will finish cooking in a later step.Carefully remove from oven.While pork medallions bake, coarsely tear spinach. -
2 Add Sauce and Finish Pork
Stir cream cheese, pesto, shredded cheese, red peppers, spinach, and a pinch of salt and pepper into tray until combined. Tray will be hot! Use a utensil. Cream cheese will melt as meal bakes.
Bake uncovered in hot oven until sauce is bubbling and pork medallions reach a minimum internal temperature of 145 degrees, 10-15 minutes.Pork thickness can vary; if you receive a thinner medallion, we recommend checking for doneness sooner.Carefully remove from oven and stir to combine. Tray will be hot! Use a utensil. Rest, 3 minutes.While sauce and pork bake, continue recipe. -
3 Heat Mashed Potatoes and Finish Meal
Place mashed potatoes in a microwave-safe bowl. Vigorously stir to combine.
Microwave uncovered until heated through, 2-3 minutes.Carefully remove from microwave. Stir in 1 Tbsp. softened butter and a pinch of salt until combined.To serve, top mashed potatoes with pork medallions and garnish pork with sauce from tray. Bon appétit!
