Cooking Guidelines
To ensure food safety, the FDA recommends the following as minimum internal cooking temperatures:

1 Start the Peppers
Turn oven on to 425 degrees. Let preheat, at least 10 minutes. Thoroughly rinse any fresh produce and pat dry.
Place diced peppers in provided tray. Top with 2 tsp. olive oil and a pinch of salt.Bake uncovered in hot oven, 15 minutes. -
2 Bake the Meal
Carefully remove tray from oven.
Drain shrimp thoroughly and pat dry. Add shrimp and a pinch of salt and pepper to tray. Stir to combine.Bake uncovered in hot oven until peppers are tender and shrimp reach a minimum internal temperature of 145 degrees, 15-20 minutes.While meal bakes, continue recipe. -
3 Make Slaw, Heat Rice, and Finish Meal
Coarsely chop cilantro (no need to stem).
Halve lime. Cut one half into wedges and juice the other half.Place pineapple in a mixing bowl. Gently crush into smaller pieces. Add mayonnaise, 2 tsp. lime juice, slaw mix, and half the cilantro (reserve remaining for garnish). Stir to combine.In a microwave-safe bowl, combine rice, 11/4 cups water, a pinch of salt, and orange pepper. Microwave uncovered, 4 minutes.Carefully remove from microwave and stir to combine. Microwave again uncovered, 2 minutes.Carefully remove rice from microwave and tray from oven. Drain excess liquid from tray.Add jerk sauce (to taste) to shrimp mixture and stir to combine.To serve, top rice with shrimp mixture and slaw. Garnish with remaining cilantro. Squeeze lime wedges over to taste. Bon appétit!
